1855 Black Angus BBQ Beef Brisket Sandwich with Fried Okra and Creamy Cole Slaw

Makes 8-10 Servings


Basic Rub

¼ cupkosher salt
¼ cuplight brown sugar
¼ cupsweet paprika
2 tbsp.chili powder
2 tbsp.fresh black pepper
2 tbsp.dry mustard powder (Coleman's)
1 tbsp.onion powder
1 tbsp.garlic powder
1 tsp.celery salt
1 tsp.cayenne
1 tsp.dried oregano

BBQ Sauce

3 cupsketchup
1 cupwater
¾ cupFrench's yellow deli mustard
1 cupdark brown sugar
⅓ cupWorcestershire sauce
1 cupcider vinegar
2 tbsp.chili powder
2 tsp.garlic powder
1onion, minced
1green bell pepper, minced
2 tsp.lemon-pepper
1 tsp.ground ginger
¼ tsp.cayenne

Creamy Cole Slaw

1 headgreen cabbage, finely shredded
¼ headred cabbage, finely shredded
4carrots, shredded on box grater


¾ cupmayonnaise
¼ cupsour cream
1small onion, grated
2 tbsp.white or cider vinegar
2 tbsp.sugar
1 tbsp.Coleman's dry mustard
1 tsp.celery seed
1 cupfresh chopped parsley
as neededsalt and black pepper

Fried Okra

1 lb.fresh Okra, cut stem end off and slit once lengthwise on a bias
8eggs, beaten
¼ cupbuttermilk
2 cupscornmeal


Beef Brisket
Combine all ingredients for sauce in a non-reactive pot, and simmer until thickened (at least 1 hour). Stir occasionally. Cool. Season brisket generously with rub mix, wrap tightly with several layers of plastic wrap and refrigerate at least six hours or overnight. Preheat oven to 225 degrees F. Remove plastic wrap. Place brisket on a rack in roasting pan, put a half inch of water in bottom of pan, cover tightly with foil and place in preheated oven for 10-12 hours to cook until tender. Remove from oven. Allow brisket to cool and juices to settle back into the meat. Unwrap, slice thinly across the grain and warm individual 6 oz. portions in a saute pan with 3-4 oz. of sauce and a teaspoon of butter. When brisket is hot arrange on rolls. Serve with fried okra and creamy cole slaw on the side.

Creamy Cole Slaw
Combine all ingredients for the dressing, and pour over the shredded vegetables. Add salt if needed.

Fried Okra
Preheat a deep fryer set-up to 375 degrees F. Mix eggs and buttermilk. Add in trimmed okra. Drain and dredge in cornmeal. Deep fry golden, drain and season with salt.
