Ingredients

  • 1 large yellow onion (roughly chopped)
  • 1 Tbsp oil (for sautéing)
  • 1½ pounds ground beef
  • 1 Tbsp tomato paste
  • 1 cup tomato sauce
  • 1 can red kidney beans
  • 1 can black beans
  • 1 can diced tomatoes
  • 2 cups beef broth
  • Seasonings
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne powder
  • 1 tsp ground pepper
  • Salt to taste about 1 tsp
  • 1/2 Tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 cup chili powder

Instructions

  1. In a large skillet, sauté the onions in oil until translucent, about 4 minutes.
  2. In the same skillet with the onions, add your ground beef, break it up and cook until brown, about 8 minutes. Once browned, drain the grease.
  3. Transfer the browned beef into a stock pot. Deglaze the skillet with half the beef broth and add it to the stock pot.
  4. With the ground beef and cooked onions in the stock pot, add the remainder of the ingredients including the seasonings. Mix everything until well incorporated.
  5. Bring the chili to a boil then lower the heat to a simmer. Simmer uncovered for 30 minutes, stirring occasionally.
  6. Garnish with shredded cheese, diced onions, and sour cream. Serve with corn chips.

Pro tip: If the chili becomes too thick, add beef broth and adjust to desired consistency.
