Grilled Bistek Slider

For an international spin on a traditional steak slider, try Chef Tim Flores of Kasama's Bistek sliders featuring grilled 1855 Black Angus top sirloin paired with a citrus aioli.

Ingredients

  • 1 lb 1855 Top sirloin
  • 3 whole onions
  • 1 Tbsp canola oil
  • 2 Tbsp soy sauce
  • 2 Tbsp dark brown sugar
  • ½ Tbsp apple cider vinegar
  • 1 cup mayonnaise
  • ½ oz calamansi or lime juice

Instructions

  1. Grill sirloin to desired temperature. Medium rare is preferred with an internal temperature of 135 degrees.
  2. Slice onion. Add oil to a sauté pan and begin to caramelize onions.
  3. Once onions begin to turn golden brown add soy sauce, apple cider vinegar, and dark brown sugar to the pan.
  4. Continue to cook onions until the liquid has reduced and thickened. Onions should be a nice dark brown color.
  5. Mix mayo with calamansi or lime juice. You can find calamansi juice and a local asian market, usually frozen. Lime juice is a good substitute.
  6. Add mayo mixture to the bottom bun.
  7. Top mayo mixture with sliced sirloin, caramelized onions, and top bun.
