Herb Rubbed Oven Roast

Ingredients

  • 2-3 lbs 1855 Black Angus Beef sirloin top roast
  • 5 Tbsp dried oregano
  • 2 Tbsp Dijon mustard
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 250 degrees. Pat the roast completely dry and salt while heating a pan over high heat. Add the oil and roast to the pan and sear on all sides until you have good color on every side. Remove the roast from pan.
  2. Line a baking sheet with aluminum foil and move the roast to the sheet. Coat all sides of the roast with Dijon mustard, creating an equal layer on all sides. In a bowl, combine the spices. Coat the roast with the spice mixture as well as salt and pepper to taste.
  3. Place roast in a 250 degree oven and cook for approximately an hour. Pull the roast out of the oven and with a temperature gauge, make sure the internal temperature has reached 115 degrees. Place roast back into the oven and turn off the oven. Leave roast in the oven for an additional 30 minutes until the rested internal temperature has reached at least 135 degrees. Once the roast has reached the desired internal temperature, rest for approximately 10 minutes or until the internal temperature has reached 145 degrees. Once rested, slice and serve!
