Ingredients

  • Brisket
  • 4 to 5-pound beef brisket
  • 2 cups buttermilk
  • ¼ cup hot sauce
  • 4 cloves garlic, minced
  • ¼ cup cayenne pepper
  • 1 Tbsp brown sugar
  • 2 tsp smoked paprika
  • 2 tsp chili powder
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • Sauce
  • ½ cup butter
  • 3 Tbsp cayenne pepper
  • 2 Tbsp honey
  • 2 tsp paprika

Instructions

  1. The night before: Pat beef brisket dry and place in a shallow pan.
  2. In a bowl, whisk together buttermilk, hot sauce, and garlic. Pour marinade mixture over brisket. Cover and refrigerate overnight, or up to 24 hours.
  3. The day of: Remove brisket from the marinade and allow excess to drip away.
  4. Preheat oven to 300°F.
  5. In a small bowl, combine ¼-cup cayenne pepper, brown sugar, smoked paprika, chili powder, onion powder, garlic powder, and salt and pepper to taste. Season brisket with mixture.
  6. Place the brisket fat-side down in a pan and cover tightly with foil. Transfer to oven, and roast for 11 to 12 hours.
  7. Carefully remove the brisket from the oven, and let it rest for 20 minutes.
  8. While the brisket rests, melt butter in a small saucepan. Add remaining cayenne pepper, honey, and paprika, then stir to combine.
  9. Slice brisket and serve smothered in sauce. Enjoy!
