Rosemary and Thyme Prime Rib Roast 

Roasting a Black Angus prime rib roast for 3+ hours with rosemary, thyme, and butter leads to an exceptionally tender and flavorful meal.

Ingredients

  • 1 8 lb. 1855 Black Angus Beef rib roast
  • ½ C Kosher salt
  • 4 sprigs thyme
  • 3 sprigs rosemary
  • 4 Tbsp butter (softened)
  • Pepper to taste

Instructions

  1. Cover rib roast in kosher salt and allow to rest overnight in the refrigerator, uncovered.
  2. Preheat oven to 200°F.
  3. Remove from fridge and cover rib roast in butter, making sure to coat all sides. Place the sprigs of rosemary and thyme in the roasting pan along with the rib roast. Roast in the oven for approximately 3 ½ hours, or until the internal temperature reaches 125°F. Remove the roast from the oven and tent with aluminum foil while it rests for 20 minutes.
  4. Heat a pan over the stove until it’s nice and hot, then sear the rib roast until you get an even browned color on all sides. Set aside and rest for 10 minutes. For medium-rare, final temp should be 135°F, for medium, 145°F. Carve and serve.
