Ingredients

  • 1 pound 1855 Black Angus Beef flap steak, cut into 4 pieces
  • 1/3 cup chopped cilantro
  • 1/4 cup plus 1 tablespoon lime juice
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon coarse salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup sour cream
  • 1/2 teaspoon ground chipotle
  • 8 (8-inch) corn tortillas
  • 1 large avocado, sliced
  • 2 cups shredded green cabbage
  • 1/4 cup chopped green olives

Instructions

  1. Combine the cilantro, 1/4 cup lime juice, olive oil, garlic and pepper with the steak in a non-reactive dish or resealable plastic bag. Marinate 30 minutes at room temperature.
  2. While steak is marinating, stir together the remaining tablespoon of lime juice, sour cream, and chipotle. Season with a pinch of salt.
  3. Preheat a grill or grill pan to high. Take the steak out of the marinade and pat dry. Sprinkle with the salt and grill 2-3 minutes per side for medium-rare. Let stand 5 minutes before thinly slicing against the grain.
  4. Heat the tortillas on the grill, in a microwave, or in the oven. Serve with the sliced steak, avocado, cabbage, olives, and sour cream mixture.
